Purple Cauliflower

Purple cauliflower is a variety of cauliflower that gets its signature color from anthocyanin, an antioxidant also found in red cabbage and red wine. The more sun exposure the cauliflower gets, the brighter the purple color will be. Purple cauliflower has a milder, slightly sweet flavor with nutty nuances. It's also more tender than white cauliflower. Purple cauliflower can be roasted, paired with other purple ingredients, or used in salads. For example, you can try roasting it with garlic powder, red pepper flakes, and parmesan cheese, or using it in a Sicilian-style salad with black rice, olives, capers, and pickled red onions.
